BEST KITCHEN HACK: | Rinse salad and vegetables thoroughly in cold water, then place them in a plastic bag. Make sure to fill the bag with plenty of air, like a balloon. Store the “balloon” in the fridge — this keeps both salad and all kinds of vegetables crisp for longer. |


Katja is a food creator, food stylist, and cookbook author, but perhaps best known to the public from TV4’s Kockarnas Kamp (Sweden’s version of Battle of the Chefs). She is an ambassador for Smaka på Västsverige (“Taste of West Sweden”). With her book Nordens Bästa Mat (The Best Food of the Nordics), she won Best in the World 2013 – Scandinavian Cuisine at the Gourmand Awards
Katja has worked in Fine Dining since 1984. Early on, she focused heavily on vegetables. She opened her first restaurant, Gaffelkonst, in 1995. This was followed by Katjas Kök in Billdal, just outside Gothenburg — a complete concept focusing on healthy food, combining bakery, café, and restaurant.
When her children were small, Katja thought she was done with the restaurant industry and spent a few years working as a recipe developer and food stylist. At that time, since most advertising agencies were based in Stockholm, she practically had a VIP card with Malmö Aviation.
But Katja wanted to return to the restaurant world — and she did, with great success. Both Katja and her husband Patrick enjoy starting new ventures, and Lilla Spinneriet in Lindome was born — a restaurant success that just kept growing. At the same time, Any Day opened in Gothenburg’s Botanical Garden, serving guests every day. Around the same period, Malmö Aviation rebranded as Bra Flyg and wanted organic breakfasts for their 13 airports. Katja and Patrick produced 800 organic breakfasts every single day!
